2/3 c. regular stick butter at room temperature 1/3 c. packed dark-brown sugar 1 large egg, yolk seperated from white 1/2 tsp. vanilla extract 1/4 tsp. salt 1 c. all purpose flour 1 c. roasted, unsalted peanuts, chopped
In a med. sized bowl, beat butter and sugar w/electric mixer until fluffy. Beat in egg yolk, vanilla and salt. Gradually beat in flour until blended. Wrap dough and chill at least 1 hour. |
